ABOUT Brinjal Pickle : A Spicy Affair RECIPE

Give spicy touch to your meals with this tasty spicy brinjal pickle. Easy to prepare and good to eat, this pickle will surely make a place in your heart.

Ingredients Serving: 4

  1. 7-8 brinjals ( around 1/2 Kg)
  2. 2 cups water
  3. 1 teaspoon salt
  4. 2 tablespoon black mustard seeds
  5. 2 tablespoon fenugreek seeds
  6. 12-15 dried red chillies
  7. 1 cup vinegar
  8. 1 teaspoon sugar
  9. 1 cup mustard oil
  10. 20-25 garlic cloves
  11. 1 inch ginger piece
  12. 1 tablespoon ginger ( roughly chopped)
  13. 1/2 teaspoon turmeric powder
  14. 2 teaspoon salt

Instructions

  1. Take brinjals. Wash them.
  2. Cut them lengthwise. Make 4 parts of one brinjal.
  3. Heat water mildly and add 1 teaspoon salt in it.
  4. Dip the brinjal pieces in it for around 7-8 minutes.
  5. Take them out. Pat them dry with a clean kitchen cloth.
  6. Let them dry in sun for around 5 hours.
  7. After around 5 hours of drying them in sun, all the moisture dried up and they are ready to be pickled.
  8. Heat a pan. Dry roast mustard seeds and take them out.
  9. Now, dry roast fenugreek seeds. Take them out in separate bowl.
  10. Crush mustard seeds with mortar and pestle and blow into them so that husk got separated.
  11. Also crush fenugreek seeds separately.
  12. Take grinder. Add 10-12 garlic cloves.
  13. Add chopped ginger.
  14. Add red chiilies and half of vinegar.
  15. Make a paste.
  16. Heat a pan. Add oil.
  17. Let the oil heated well.
  18. Cut the remaining garlic cloves lengthwise into halves.
  19. Make juliennes of ginger piece.
  20. When oil gets heated, add garlic and ginger. Saute.
  21. After around 2 minutes, add chilli paste into it.
  22. Mix well. Add remaining vinegar and cook on sim for 2-4 minutes.
  23. Add crushed mustard seeds and fenugreek seeds.
  24. Mix well. Add turmeric powder, sugar and salt.
  25. After around 2 minutes, add dried brinjal pieces to it.
  26. Cook on sim for 2-4 minutes.
  27. Switch off the gas and let it cool.
  28. Store in a glass container. Keep it for 2 hours and it is ready to eat.
