ABOUT Pindi Chole Calzone RECIPE

Pindi Chole is a very famous delicacy served in Punjab. Full of aromatic and flavourful spices, this dish is unforgettable. Though this recipe is presented in an Italian Calzone style.

Ingredients Serving: 6

  1. 1 cup chickpeas (kabuli chana) soaked overnight
  2. 1 pcs. tea bag
  3. 1 pcs. Boiled Potato
  4. 1 teaspoon Kasoori Methi
  5. 8 pcs. Amla
  6. 2 teaspoon Magaz (Melon seeds)
  7. 3 tablespoons - Chana Masala(see tip)
  8. 4 tablespoons Ghee
  9. Salt to Taste
  10. 1 tablespoon Coriander powder
  11. 2 teaspoon Cumin powder
  12. 2 teaspoon Chaat masala
  13. 3-4 pcs.green chillies slit
  14. 2 tablepoons Fresh Plum puree
  15. 1 teaspoon Black Salt
  16. 1 inch ginger julienne
  17. ½ cup grated cheese
  18. Kulcha (base for calzone):
  19. 3 cups Maida (all purpose flour)
  20. 1/2 teaspoon Baking powder
  21. 1/4th teaspoon Baking Soda
  22. Salt to taste (approx 1 tsp)
  23. 1/2 cup Yogurt
  24. 1 tbsp Ghee

Instructions

  1. For Chole-Soak Chana overnight. Now boil this Chana with a tea bag, salt and Amla's until it's fully cooked. Approx. 30 mins.
  2. Strain this chana. Save some leftover liquid.
  3. Now mix this chana with all the spices ground to make Chana Masala, Chaat masala, Salt, Black salt, Cumin powder, coriander powder, melon seeds, kasoori methi, green chilli, ginger, plums puree and cubed potato.
  4. Bring ghee to a smoking point. You’ll see a lot of smoke coming out of it. Now add this smoking ghee to the Chana mixture that was made.. Let the spices cook in this hot ghee.
  5. Now put it on the range and add half cup of leftover liquid and let it simmer for 5 - 7 mins. Chole is ready.
  6. For Kulcha (Base for calzone)- Make a kulcha dough by sifting the flour, salt, baking soda and baking powder together.
  7. Whisk yoghurt and 3/4th cup water together. Add ghee to the flour with yoghurt and knead it to make a semi soft dough. Let it proof for 1 hour.
  8. Now take 50 gms of this dough and roll it out like a 8" pizza.
  9. Then on one half of the pizza add Chole. Add some grated cheese. Fold the pizza from the top into a half moon shape. Pinch and seal the ends. Now carefully dork it from the top, ensure you don’t tear the dough.
  10. Bake this chole calzone in an oven for 20 mins on 180 C. Brush it with ghee and serve hot.
