This is something which is tasty and healthy as well, a perfect side dish to be served with some roti or some steamed rice.

Ingredients Serving: 2

  1. 1 cup Bitter guard round pieces
  2. 3 tbsp Tamarind pulp
  3. 1/3cup Jaggery
  4. Salt to taste
  5. 3 red chillies
  6. 3 green chillies
  7. 1/4tsp Mustard seeds
  8. 1/4 tsp methi seeds
  9. 1/4 tsp zeera
  10. Pinch of hing
  11. curry leaves
  12. 1/8 tsp turmeric powder
  13. 1/2 cup water
  14. 1 tbsp Besan

Instructions

  1. In a pan heat oil
  2. Put red chillies pieces, green chillies pieces, mustard seeds, jeera, metthi seeds , stir when it crackel add hing and bitter guard pieces.
  3. Now add salt , water , termaric .
  4. Cover the pan , let it cook.
  5. After cooked the Bitter guard then add jaggery, tamarind pulp.
  6. Let it cook without cover , in simmer for 10 minutes.
  7. Now add curry leaves.
  8. In a bowl mix besan +1 tbsp water.
  9. Pour this besan mix into the curry. Stirr and cook it another 2 minutes.
  10. Serve with hot rice.
