ABOUT Eggless vanilla Muffins RECIPE

Muffins are very small cake like baked goods made in a muffins pan. The batter for muffins is made using 'Quick Bread' method. Generally batter mixed using the muffins method are less rich and less sweeter than cakes using creaming method.

Ingredients Serving: 6

  1. Maida 1 and 1/2 cup
  2. 1 cup brown sugar / powdered sugar
  3. 1 cup curd
  4. 1/2 cup refined oil
  5. 1/2 tsp baking soda
  6. 1 and 1/2 tsp baking powder
  7. 1 tsp vanilla essence
  8. Whiped cream for frosting
  9. Food colour

Instructions

  1. Sieve the maida, 2 times to avoid any lumps.
  2. Beat curd and sugar till smooth and mix baking soda. Keep a side for 5-10 minutes till it becomes frothy.
  3. Then add vanilla essence and oil to the curd and mix. Now add maida to it.
  4. Pre heat oven at 170 for 10 minutes.
  5. Now grease the muffin mould and pour the bater.
  6. Bake at 170 degree for 35 to 40 minutes.
  7. Let it cool before using frosting.
  8. You can any shape or decoration with whipped cream.
  9. I used yellow colour in beaten whiped cream for frosting. Sprinkle some colours gems.
