Ingredients Serving: 4

  1. Small brinjals 6 to 8
  2. Oil 1 tablespoon
  3. Yogurt 1 cup
  4. Besan 2 teaspoons
  5. Mustard seeds 1 teaspoon
  6. Jeera 1 teaspoon
  7. Curry Leaves 8 to 10
  8. Haldi powder 1/2 teaspoon
  9. Red chilly powder 1 teaspoon
  10. Whole red chilly 1 to 2
  11. Ginger garlic paste 1 teaspoon
  12. Coriander powder 1 teaspoon
  13. Garam masala 1 teaspoon
  14. Finely chopped onion 1 tablespoon
  15. Finely chopped tomato 2 tablespoon
  16. Jeggary 2 teaspoons
  17. Salt to taste
  18. Chopped coriander for garnishing

Instructions

  1. Take brinjals and cut them in cross shape just like we do for Stuffed bengan/brinjals
  2. Apply little salt to cut brinjals and keep aside
  3. Heat oil in a pan and crackle mustard seeds and then add jeera
  4. Now add curry leaves and haldi, red chilly and coriander Powder
  5. Add finely chopped onion and Tomato, whole red chilly and Ginger Garlic paste. Sauté till golden brown
  6. Sauté little and add chopped brinjals ..
  7. Mix well and adjust salt
  8. Add a cup of water
  9. Cook covered till half done
  10. Mix yogurt and besan without lump
  11. Add this Besan and yogurt mixture to cooking brinjals ..
  12. Add garam masala and adjust consistency by adding little water
  13. Cook covered till done and turn in between
  14. Add little jeggary (optional) and mix well
  15. Dahi wale bengan or Brinjals in yogurt sauce is ready to serve
  16. Finally garnish with chopped coriander and serve hot with steamed rice and phulka
