ABOUT Cheesy Aubergines in Pasta Sauce RECIPE

Aubergines /brinjal with soft pulp, is ideal for this Indo western dish.I used mashed potatoes with onion, tomato garlic mash for filling here ,saute-cooked in some oil.Base of pasta sauce and topping of grated some Mozrella,this is microwaved for 3-4 minutes before serving.

Ingredients Serving: 2

  1. 1 long pulpy aubergine
  2. 3 ripe tomatoes
  3. 1 boiled potato
  4. 1 Onion
  5. 1 tspn garlic paste
  6. 1 tblspn tomato sauce
  7. 1 tblspn pizza pasta sauce(funfood)
  8. 2 tblspns mozzerella cheese
  9. Salt to taste
  10. 1/2tspn chilli flakes
  11. 1 cup boiled sweet corn
  12. 2-3 tablespn oil

Instructions

  1. Chop onion fine and grate the tomatoes
  2. Heat some oil and saute garlic and onions add grated tomatoes .
  3. Add some salt keep on slow flame
  4. Cook this as it makes a semi dry paste
  5. Now wash dab dry the aubergine and cut into halves
  6. Scoop out these from soft centre de seedng them too
  7. Now add the tomato onion mix ready ,well with boiled potato mashed
  8. Add Some chilli flakes
  9. Fill the mash ready into these scooped out aubergines
  10. Heat some oil in a pan and keep these stuffed aubergines to saute 2-3 minutes care fully on each side and cover 2-3minutes
  11. As they're getting done line a baking dish with pizza pasta sauce and tomato sauce
  12. Place the done aubergines on this sauce
  13. Grate mozzarella on these
  14. Add some boiled sweet corn randomly
  15. Cook in the microwave for 3-4 minutes to melt cheese just before you serve
