Cauliflower base with mushroom and cheese toppings

Amazing...
First dice the cauliflower florets into very small pieces and make it a kheema. You can use your food processor which produces better results.
Now cook the cauliflower covered on microwave safe bowl for 3-4 minutes
Remove the cauliflower and strain the excess water using a Muslin cloth as this enables us to have a crispy base for the pizza. Leave it to cool for sometime.
Add 1/2 cup cheese, salt, pepper, Italian seasoning 1 Tbsp, eggs 2 to this cauliflower and mix it well.
Pre-heat the over at 200'C for 10 minutes. Line a baking tray with baking paper or use baking spray.
Place the prepared cauliflower mixture in a rectangle shape and make a base. Bake this in the oven for 12-15 minutes until the base is cooked and the sides start to crisp.
While the cauliflower is cooking cut the mushrooms into thin slices. Prepare the tomato sauce using tomato purée, salt, pepper, garlic and oregano or use tomato ketchup for kids.
Take the cauliflower out when it is done and line it with the tomato sauce and then top with mushrooms and shredded cheese 1/2 cup.
Sprinkle with salt, pepper, Italian seasoning, oregano, parsley, chilli flakes.
Toast in the oven for 2-4 minutes.
Take it out and serve it.
