ABOUT Chicken and Apricot Tagine RECIPE

It's an North African slow cooked stew dish. There are many ways and different ingredients used to make a tagine. Today I have used chicken and Apricot along with the ready to use Sprig Tangier spice blend. The spice blend is an absolute medley of flavours, it enhances and makes the stew more flavorful. No other extra spices are required for flavoring.

Ingredients Serving: 4

  1. 500 grams Chicken pieces
  2. 15 Dried Apricot
  3. 1 medium size onion diced
  4. 2 small Tomato diced
  5. 3 Garlic cloves grated
  6. 1 1/2 tsp Ginger grated
  7. 1 tbsp fresh coriander leaves
  8. 4 tsp Sprig Tangier spice blend
  9. 1/4 tsp Salt for seasoning the Chicken
  10. 1 1/2 cups of Chicken stock
  11. 2 tbsp olive oil

Instructions

  1. Heat oil in a pot over medium-high heat.
  2. Season the chicken with salt.
  3. Add the chicken pieces into the pan and stir fry the pieces till light brown in colour.
  4. Remove the chicken pieces and keep it aside.
  5. Add onions into pan and sauté it until light brown in colour.
  6. Add the garlic, ginger and sprig tangier spice blend.
  7. Stir for 1 minute.
  8. Add the tomatoes and chicken pieces.
  9. Stir it for a minute.
  10. Add the chicken stock.
  11. Simmer the chicken for 10 minutes.
  12. Remove the chicken pieces and place it in a tagine pot.
  13. Pour in half of the juices.
  14. Add the apricot.
  15. Put the tagine in the oven for 50 minutes at 180 celsius.
  16. In between keep adding the remaining juices into the tagine.
  17. Check and remove it after the chicken have cooked.
  18. Sprinkle coriander leaves and serve hot.
