Ingredients Serving: 2

  1. 250 gm Baby eggplant or green brinjals
  2. 2 potatoes peeled
  3. 1 pod of peeled garlic
  4. 2 big onion chopped
  5. 1 tomato
  6. 2 inch of peeled ginger
  7. 1/4 cup Green peas (optional)
  8. cilantro
  9. 1/4 spoon mustard seeds
  10. 1/2 spoon coriender seeds
  11. 1/4 spoon cumin
  12. Salt
  13. 2 spoon red chilli powder
  14. 1 spoon Coriender powder
  15. 1/2 spoon garam masala
  16. 1/4 spoon turmeric

Instructions

  1. dry roast 2 big onions 12 cloves of garlic n 2 inch ginger until it turns brown on low flame then add 2 spoon oil n 1/2 spoon cumin n 1/2 spoon coriander seeds....saute for 5 minutes more then let it cool down and grind it into paste using little water.
  2. now add salt turmeric red chilli powder coriander powder and garam masala mix it n stuff it in washed and slitted brinjal.
  3. now in wok add 1 cup of oil when it's warm add mustard seeds and garlic then potatoes and cover the wok lid
  4. when potatoes turns golden add stuffed brinjal and cover it with lid without stirring it and cook for 5 minutes...stir and cook again for 2 minutes...
  5. When brinjal turns soft add little salt as we have already in stuffing for brinjal then add lots of tomatoes n green peas and cover it ...cook until it's done
  6. If you want gravy add 2 cup water and cook for 5 minutes more.Garnish with chopped cilantro .
