ABOUT Pistachio Honey Mascarpone kisses ! RECIPE

Rich and nutty pistachios with a cream and sweet center make these kisses versatile.Their texture and appearance is more like macroon with a feet, soft and chewy biscuits, cream and mildly sweet centers. Gosh, I love them ! Base recipe idea from waitrose.

Ingredients Serving: 8

  1. 100 gm : Roasted Pistachios
  2. 50 gm : Sugar
  3. 1/4 cup : Honey
  4. 1 medium : Egg white
  5. 45 gm : Self raising flour
  6. 1/2 tsp : Baking powder
  7. For the filling : 100 gm : Mascarpone cheese
  8. 2 tbsp : honey
  9. 2 tbsp : Icing sugar

Instructions

  1. Preheat the oven to 170ºC. Line a large baking sheet with baking parchment
  2. De shell the pistachios and grind them coarse resembling semolina.
  3. Add the sugar,honey, egg white, flour and baking powder to the processor and blend to a smooth, thick paste.
  4. Roll the mixture into 32 cherry-sized balls and space them an inch apart on the baking parchment.
  5. The mixture is a little sticky so wet your hands once or twice as you roll.
  6. Bake for 8-10 minutes at 170 degree celcius until risen,just firm and slightly golden edges.
  7. Remove and cool on wire rack.
  8. As the biscuits cool, beat the mascarpone with honey and icing sugar.
  9. Once the biscuits cool to room temperature use the cheese mix to sandwich the biscuits together in pairs.
  10. Garnish with mint leaves or dust of icing sugar and serve.
  11. Nutty rich Pistachio Honey Mascarpone kisses ready to gobble.
