This is a very simple and easy cake, with the goodness of carrots in them. Follow this easy recipe to make this at home.

Ingredients Serving: 8

  1. 2,1/2 cup all purpose flour
  2. 2 tsp baking soda
  3. 1 tsp Baking powder
  4. 3 eggs
  5. 1/2 cup oil
  6. 2 tsp Cinnamon Powder
  7. 1 tsp Nutmeg powder
  8. Tiny pinch of cloves powder
  9. 2 cup sugar
  10. 1/4 cup butter milk
  11. 1 tsp vanilla extract
  12. 1/2 cup coconut flakes
  13. 1/2 cup chopped walnuts
  14. 1/4 cup black rasine
  15. 2 cup grated carrots
  16. Pinch of salt
  17. For topping
  18. 2 cup hung yoghurt
  19. 2 tbs honey
  20. 1/2 tsp Vanilla extract
  21. 2 tbs grated carrots
  22. 2 tbsp roasted coconut flakes

Instructions

  1. Preheat oven to 325 degrees F ( 165 degree C). Stir together,the flour, baking soda, baking powder,salt, cinnamon powder, nutmeg powder,tiny pinch cloves powder,set aside.
  2. In a large bowl with electric mixture, combine the eggs, sugar,oil, butter milk, vanilla,mix together till smooth with no oily puddles.
  3. After slowly add the flour mixture. Mix cake batter until flour mixture is Incorporated. Add carrots , coconut, chopped nuts. Cake pans with parchment paper and lightly grease​/ spray.
  4. Pour batter into prepared cake pan. Bake at 350 degrees for about 30 to 40 minutes,or until a toothpick comes out clean from the center of cake. Let cakes rest on wire rack 10 minutes. Remove cake from pans, after 10 minutes.
  5. For topping In a bowl add hung yoghurt and honey, vanilla,mix well. Once cakes are at room temperature spread yoghurt mixture. Sprinkle grated carrots and roasted coconut.
