Ingredients Serving: 6

  1. 2, 1/2 cup all purpose flour
  2. 2 tsp baking soda
  3. 1 tsp Baking powder
  4. 1/2 cup oil
  5. 3 eggs
  6. 2 tsp Cinnamon Powder
  7. 1 tsp Nutmeg powder
  8. pinch of clove powder
  9. 2 cup sugar
  10. 1 /4 cup butter milk
  11. 1 tsp vanilla extract
  12. 1/2 cup coconut flakes
  13. 1/2 cup chopped walnuts
  14. 1/4 cup black raisins
  15. 2 cups grated carrots
  16. for toppings
  17. 2 cup hung yoghurt
  18. 2 tbs honey
  19. 1 drop vanilla essence
  20. 2 tbs roasted coconut flakes
  21. 2 tbs grated carrots

Instructions

  1. Preheat oven to 325 degrees F ( 165 degree C).
  2. Stir together,the flour, baking soda, baking powder,salt, cinnamon powder, nutmeg powder,tiny pinch cloves powder,set aside. In a large bowl with electric mixture.
  3. Combine the eggs, sugar,oil, butter milk, vanilla,mix together till smooth with no oily puddles.
  4. After slowly add the flour mixture. Mix cake batter until flour mixture is Incorporated.
  5. Add carrots , coconut, chopped nuts. Cake pans with parchment paper and lightly grease​/ spray. Pour batter into prepared cake pan.
  6. Bake at 350 degrees for about 30 to 40 minutes,or until a toothpick comes out clean from the center of cake.
  7. Let cakes rest on wire rack 10 minutes.
  8. Remove cake from pans, after 10 minutes.
  9. For topping In a bowl add hung yoghurt and honey, vanilla,mix well.
  10. Once cakes are at room temperature spread yoghurt mixture.
  11. Sprinkle grated carrots and roasted coconut. Chill cake in the refrigerator for 3 hour. Serve and enjoy.
