ABOUT Almond Coconut Honey Florentines ! RECIPE

Florentine biscuit or simply a florentine is a sweet pastry of nuts and fruits.Florentines are made of nuts (typically hazelnuts and almonds) and candied cherries mixed with sugar melted together with butter and honey, cooked in an oven. They are often coated on the bottom with chocolate. Other types of candied fruit are used as well .They typically contain neither flour nor eggs. These wafer thin almond cookies make a crispy holiday treat.

Ingredients Serving: 10

  1. 6 tbsp : unsalted butter
  2. 1/3 cup : Honey
  3. 1/4 cup : Brown sugar
  4. 1/3 cup : All purpose flour
  5. 1/3 cup : Desicated coconut
  6. 1/2 cup : Chopped Almonds
  7. 1/2 tsp : Vanilla extract
  8. Pinch : Ground cinnamon
  9. Pinch : Sea salt

Instructions

  1. Line two baking pans or cookie sheets with parchment paper. Heat oven at 350 degree Fahrenheit.
  2. Combine butter, brown sugar, honey in a sauce pan cook over medium heat until butter has melted and sugar is completely dissolved for about 5 minutes.Bring this to a boil.
  3. Whisk in the flour,cinnamon,salt, coconut,chopped almonds and vanilla extract until smooth.
  4. Turn off the heat. Working quickly,drop a teaspoon of cookie dough on to prepared cookie sheets two inches apart as they spread a lot while baking.
  5. Bake until cookies spread and turn golden for about 8 minutes at 350 degree Fahrenheit turning the baking sheets half way through.
  6. Remove and cool a bit. Transfer the cookies on to wire rack and repeat to bake off remaining dough.
  7. Cool the cookies to room temperature and store in airtight container at cool and dry place.
  8. Lacy honey cookies with almonds and coconut are ready to munch .
