ABOUT Honey Coconut Rice. RECIPE

In Maharashtrians we make " Narali bhat" on Rakshabandhan. Jaggery is added for sweetness. Here I have substituted Honey for Jaggery in Rice.

Ingredients Serving: 2

  1. Rice 1 cup
  2. Shreded fresh Coconut 1 1/2 cup
  3. Honey 3 tbsp
  4. Ghee 3tbsp + 1 tbsp
  5. Cloves, Javentry, Star anne, Cinnamon for seasoning. ( few)
  6. Cinnamon powder 1 /2 tsp
  7. Blanched Almonds, Pistachio, Cashews 2 tbsp. + 1 tbsp for garnishing.
  8. 4 to 5 strands of Saffron soaked in water.

Instructions

  1. Wash and soak rice for 15 minutes.
  2. Drain and preserve the water.
  3. Heat ghee in a pan, add khada masala in it.
  4. Saute a while and add Fresh Shreded Coconut.
  5. Saute a little and add drained Rice.
  6. Saute for 3 minutes. Add hot water.
  7. Cover and let it cook on medium flame.
  8. After it cooks add Saffron water, blanched and Chopped dry fruits.
  9. Now add 3 tbsp honey. Mix with fork taking care not to break rice.
  10. Add 1 tbsp ghee, cover and let honey mix for 2 minutes.
  11. Serve hot with garnish of some dry fruits.
  12. I have used my tea cup for all measurements.
