Ingredients Serving: 8

  1. Lukewarm water 1 1/2 cups
  2. Active dry yeast 2 1/4 tsp
  3. Honey 1 tsp
  4. Olive oil 1/2 cup
  5. Semolina flour 1/2 cup
  6. All purpose flour 3 1/2 cup
  7. Salt 1 1/4 tsp
  8. Chicken breasts 500g
  9. Mushroom sliced 1/2 cup
  10. Butter 1 tbsp
  11. Salt Pinch
  12. Black pepper pinch
  13. Italian herbs pinch
  14. Bay leaf 1
  15. Water 4 cup
  16. Ginger minced 1 tsp
  17. Calzone :
  18. Bean sprouts a handful
  19. Green onion chopped a handful
  20. Mozzarella shredded a handful
  21. Beaten egg 1
  22. Sesame oil for brushing

Instructions

  1. lets make pizza dough: in a mixing bowl, add water, yeast and honey and let sit for 10 mins or until foamy.
  2. in another big bowl add all flour, olive oil and salt. add in yeast mixture and combine using spatula till it comes together as a dough. pour the dough onto a floured surface and knead for 10 mins
  3. form the dough into a ball and let rest in a oiled bowl, covered with cling film for 1 hour or doubled in size
  4. once the dough has risen, punch down the dough and transfer to a floured surface, divide in halves, form them into balls and let sit in a oiled bowl, cover with cling film, and rise in fridge overnight. this slow fermentation gives more texture to the pizza dough. this recipes makes 4 large pizza or calzone
  5. lets make chicken: in a saucepan, add water, chicken, Italian herbs, bay leaf, salt and pepper, bring it to a boil and cook chicken for 10mins on low heat. drain water and set aside
  6. in a frying pan, melt butter and add in mushrooms. saute till it starts to sweat. season with salt and pepper and set aside
  7. once the chicken had cool, dice into bite size pieces. in a bowl, toss in chicken with 2 tbsp of hoisin sauce and set aside. in a small bowl add in minced ginger and mix well set aside
  8. preheat oven to 230 degrees. punch down the pizza dough and transfer to a floured surface. roll out and divide to halves. roll the dough out into a large round pizza shape. carefully transfer the dough onto a floured pizza pan
  9. brush egg wash on the edges of the dough. spoon in the mixture over the center of the dough. shred some mozzarella. add in chicken and mushrooms. distribute them evenly. top with green onion and bean sprouts
  10. carefully take the bottom end and fold it over to the top end. seal off the edges with fingers, trim off any large excess.
  11. brush the top with sesame oil. slit 2 cuts on the top to let air escape. wack into the oven and bake for 10 minutes. rotate the calzone half way thru to bake evenly. once golden brown, let cool before cutting. voila! a..
