Ingredients Serving: 4

  1. For the Dough :
  2. Maida - 1.25 cups
  3. Semolina - 2 tbsp
  4. Yeast - 2 tsp
  5. Salt
  6. Milk - 3/4 th cup
  7. Sugar - 1 tsp
  8. Olive oil
  9. Cooked chicken curry :
  10. Boneless chicken (100 gm)
  11. Chopped onion - 1
  12. Ginger Garlic Paste - 1 tsp
  13. Basil/thyme/rosemary - 1.5 tsp
  14. Red chilly powder - 1/2 tsp
  15. Refined oil
  16. Salt
  17. Home made mayonnaise :
  18. Egg yolks - 3
  19. Refined oil - 1/4 th cup
  20. olive oil - 1/2 cup
  21. lemon juice - 1 tbsp
  22. Salt

Instructions

  1. To make the dough :
  2. To make the dough, activate the yeast using warm milk, sugar. Once activated , mix it with flour, salt and knead a soft dough.
  3. Apply some oil and leave it to rise, in a warm environment, for about 1.5 hours.
  4. To make the chicken filling :
  5. Heat some oil, add the chopped onion. Fry till golden brown and then add the ginger garlic paste.
  6. Saute for a minute and then add the spices and salt followed by chicken.
  7. Cook till done. Cool.
  8. To make the mayonnaise :
  9. Whisk the egg yolks and slowly add the oils till a smooth pasty consistency is obtained.
  10. Add the lemon juice, salt and whisk. Store in the fridge.
  11. Assembly :
  12. After 2 hrs of proofing, roll the dough to form a round shape, spread some mayonnaise, then add the chicken curry.
  13. Add the grated cheese.
  14. Now wet one side of the dough with water and bring the other side on top of it and fold the edges in crimping fashion.
  15. Brush the tops with little oil and sprinkle oregano.
  16. Bake them for 15 minutes in a preheated oven at 200℃.
  17. P.S : originally the calzones have a tomato paste but I don't like the taste of it so I replaced it with mayo.
