ABOUT AALOO METHI BHAJIA RECIPE

A desi everyone ones favourite party snack. Boiled potatoes and green fenugreek leaves mixed with gram flour batter and deep fried into small dumplings.

Ingredients Serving: 10

  1. Boiled potatoes medium 5
  2. Fresh fenugreek leaves 1/2 cup
  3. Gram flour 3/4 cup
  4. Salt 1 tesp
  5. Red chilli powder 1/2 tesp
  6. Cumin seeds 1/2 tesp
  7. Anardana seeds 1/2 tesp
  8. Ginger paste 1 tesp
  9. Green chilies 2
  10. Oil for frying.

Instructions

  1. Peel boiled potatoes and mash them roughly
  2. Mash all.
  3. Wash and chop green fenugreek leaves. If don't have fresh use dried fenugreek leaves.
  4. IN a mixing bowl add gram flour, ginger paste, chopped green chilies, salt, red chilli powder, cumin seeds, Anardana seeds and fenugreek leaves.
  5. Make a smooth batter using water.
  6. Add mashed potatoes and mix well.
  7. Now heat oil in a wok. Check the oil by dropping small portion of batter to sizzle up at once.
  8. When oil is ready pinch very small portions of the batter and drop in hot oil.
  9. Don't overcrowd the WOK.
  10. Turn all over and set the flame to medium low.
  11. Cook for 4-5 minutes. Stirring occasionally.
  12. When bhajia seems about to be done switch flame to high and cook for other 2 minutes. Stirring occasionally.
  13. When crisp and golden remove to absorbent paper.
  14. Prick in saute sticks. Drizzle with ketchup and serve.
