Ingredients Serving: 4
For paneer tikka marination: 1 cup thick hung curd or yougurt
1 tbsp roasted gram flour
1 tbsp mustard oil
1/2 tbsp ginger garlic paste
1 tsp cumin powder
1 tsp Coriander powder
1 tsp garam masala powder
1/2 tsp amchur powder
1/2 tsp Chaat masala powder
1 tsp kashmiri red chilli powder
Black /Rock/Regular salt to taste
1 tsp Lemon juice
1/2 tsp turmeric powder
250 gm. Paneer
1 green capsicum cut in cubes
1 red bell paper cut in cubes
1 seedless tomato cut in cubes
For green chutney
1 cup green coriander leaves wash and chopped
1 /2 cup mint leaves washed
1 green chilli
1 inch ginger wash and chopped
1 raw mango peel and chopped
2 cloves garlic
1/2 tsp black pepper powder
black salt to taste
1 tsp cumin powder
Water as needed
For dough
1 cup Wheat Flour
1 tsp Salt
1 tbsp oil
Water as needed
Oil/ghee for roasting rolls
For veggies and salad dressing in rolls
1/4 cup shredded cabbage
1/4 cup shredded carrots
1 onion cut in thinly slices
1 tsp chaat masala
1/2 tsp kasmiri red chilli power
Salt to taste
Instructions
For paneer tikka marination
Take all Ingredients
In a mixing bowl add curd, roasted gramflour, all spices, mustard oil, Ginger garlic chilli paste. Except paneer and veggies
Adjust taste of spices and salt. Now add paneer and veggies carefully . Mix gently with hands. And keep it in fridge for set marination over veggies and paneer for atleast 30 minutes.
Meanwhile we work on salad, chutney, and dough
For chutney Take all Ingredients in jar as above mentioned. Add little water. Grind it till smooth paste. Adjust salt and lemon
For salad dressing In a bowl add thinly sliced onion, shredded cabbage, shredded carrot, sprinkle lemon juice, chaat masala,and salt as pet taste mix well..
For dough In a bowl add flour ,salt, oil/ghee mix well add water as needed and mix everything and knead it . Add water if required. Make a soft chapati dough. Cover it with damp cloth and keep it aside for 10 minutes.
After 10 minutes. Knead the dough again with little oil or ghee in your palm.. Divide the dough in to small equal size chapati balls. dust the dough with some flour. roll it with help of rolling pin. Roti should be thick not thin. Place the roti on hot tawa. Cook the base flip it and spread some oil and flip again .Semi half cook the roti for rolls. Make all chapati like this..
Heat a oven at 180' C. Add marinated paneer and veggies in skewers or barbeque sticks.
Grill these tikka sticks in a oven for 10 minutes and change the sides again grill it for 10 minutes. When all tikka done keep it out from oven.
Assembling and making kathi roll.. take one roti. Spread mint coriander chutney over it. Now place paneer tikka cubes in centre. Remove the sticks. Top with veggies salad and roll it like wrap.
Heat a non stick tawa. add little butter or ghee . Shallow fry these kathi rolls. And cut it half. .
Serve hot with green chutney..
