Ingredients Serving: 5

  1. 1 cup wheat flour
  2. 2 tbsp fine sooji/ samolina
  3. 2 tbsp oil
  4. 1/4 tsp cumin seeds
  5. 3/4 tsp salt
  6. ¼ cup or as required warm water
  7. oil to fry

Instructions

  1. Mix the dry ingredients , flour, sooji, salt, and cumin seeds and add the oil and mix it well.
  2. Add water slowly to make firm dough. Cover the dough and set aside for at least ten minutes.
  3. Make a paste of flour and clarified butter. Take 1 tbsp flour add 2 tbsp oil or ghee and mix well.
  4. Divide the dough into 2 or 3 parts.Take each part of the dough and make them in smooth round shape. Roll them into thin circles
  5. Apply flour mixture
  6. Make a roll
  7. Cut into 1+1/2 inch or 2 inch and press gently.
  8. Again  Roll them into thin circles should be about four inch diameter. Fold them as in picture shows in triangle shape. Don't press them .
  9. Prick each nimki with a fork in 10 to 12 places, (to prevent puffing the nimkies while friying , prick them lightly from both sides 2 to 3 times
  10. Heat the oil in a pan on medium heat. To check if the oil is ready, put a small piece of dough in the oil,fry them until both sides till they gets light golden-brown. This should take about 6 to 8 minutes
  11. Take them out over paper napkin
