ABOUT Asian Fries Vegetable Fajitas RECIPE

Fajitas are Mexican food. It can be prepared using variety of veg and non-veg stuffing’s and served on warm tortillas, crepes or tacos. In this recipe, I have used rice flour crepes or ghavan as a base and stuffed with potato fries, variety of vegetables and topped with cheese, chili flakes. It’s a healthy, tasty and quick recipe.

Ingredients Serving: 3

  1. Potato French Fries / Potato Fries– 1 cup (I used McCain fries)
  2. Yellow capsicum slices – 1/2 cup
  3. Red capsicum slices – ½ cup
  4. Green Onion Bulbs finely sliced – ½ cup
  5. Garlic finely chopped – 2tsp
  6. Scallions finely chopped– ½ cup
  7. Cottage cheese cubes – 1/4th cup
  8. Oil – 2 cups for frying + 2 tbsp for vegetables
  9. Cream Cheese – 2tbsp for fries + 3-4tbsp
  10. Tomato Ketchup – 1-2 tbsp
  11. Processed cheese – ¼th cup
  12. Red chili flakes – 2-3 tsp
  13. Salt as per taste.
  14. For Rice flour crepes /Ghavan: - Rice – 1cup
  15. Salt – as per taste
  16. Oil - 3tbsp
  17. Or Rice flour – 1 cup (coarsely grinded) texture should be like bhajani flour, not too coarse like Sooji or not too fine.
  18. Other ingredients for serving - Tomato Ketchup, Tomato Salsa

Instructions

  1. For Fries - In a Wok heat oil. Fry French fries or Potato fries on medium to low flame until crisp and brownish. Toss the same with cream cheese and salt. keep aside.
  2. Add 2tbsp of oil to the frying pan. Heat on high. As soon as the oil is hot, add the finely sliced onion bulbs and finely chopped garlic to the pan. Cook for 1 minute.
  3. Add sliced bell peppers to the pan. Stir and continue to cook for another 2-3 minutes. Season with black pepper powder and salt.
  4. Finally, add finely chopped Scallions. Mix well.
  5. In the same pan, add little oil and add paneer cubes. Shallow fry from all the sides.
  6. For Ghavan or Rice flour crepes - Soak rice in a water overnight. Next day blend the same in blender till smooth batter. Add salt and adjust the consistency of the batter to ensure it is not very thick nor very thin.
  7. If using rice flour, add salt, water and adjust consistency of the batter accordingly.
  8. In a nonstick pan drizzle oil. Spread all over with rubber spatula. Pour a ladle full or two, batter evenly in a thin round shape.
  9. Cover it with a plate for 3-5 seconds. Remove plate and flip it when the edges begin to rise from the pan. Cook it from other side too.
  10. Assembling- Take Rice flour crepe or Ghavan. Spread a tsp of tomato ketchup all over it.
  11. Spoon Potato fries evenly down the centers of warm rice crepes.
  12. Now spoon vegetable mixture and paneer evenly over the fries layer. Top it with red chili flakes, processed and cream cheese. Roll up and serve warm with tomato salsa or ketchup.
