pyaaj ki kachori is made of onions,gram flour and I had given twist by adding one mashed potatoe,I have served kachori with kadhi ,green chutney and sweet tamarind chutney

Ingredients Serving: 4

  1. 3 cups all purpose flour/maida
  2. 2 tbsp of ghee
  3. Salt to taste
  4. Baking soda 1/2 tsp
  5. for stuffing-------
  6. 3cups chooped onions
  7. gram flour 2 tbsp
  8. Fennel Seeds 1 tsp
  9. Salt to taste
  10. red chili powder 2tsp
  11. Corriander powder 1 tsp
  12. Lemon juice 1 tsp
  13. green chili 1 crushed
  14. Ginger 1/2 tsp
  15. oil 2tsp for stuffing
  16. oil for frying kachori

Instructions

  1. take all purpose flour in bowl
  2. add ghee
  3. add salt
  4. add baking powder
  5. add water and knead semisoft dough
  6. preparations of stuffing-----------
  7. in a pan heat oil
  8. add curry patta leaves ,ginger and greenchilli
  9. now add gram flour
  10. cook till it leaves raw smell of gram flour
  11. now add onions
  12. add red chili powder
  13. add corriander powder
  14. add lemon juice
  15. mix it properly
  16. cook for three to four minutes
  17. add lemon juice and mashed potatoe
  18. you can add chopped corriander leaves at this stage
  19. add salt and mix properly
  20. switch off flame
  21. cool it completely
  22. now divide it in equal parts
  23. divide dough also in equal parts
  24. take dough roll with rolling pin and keep stuffing
  25. now fold from all sides and remove extra dough from upper portion
  26. stuff all kachori like that
  27. now fry them in hot oil on slow medium flame
