ABOUT Ghee Rice Kerala Style RECIPE

This is an easy rice recipe which can be made on special occasions easily.

Ingredients Serving: 4

  1. Basmati rice/any thin kolam rice 2 cups
  2. Ghee 3 tablespoons
  3. Onion 1 cup sliced
  4. Onion chopped 1 cup
  5. Carrot chopped into long pieces 1/2 cup
  6. Ginger paste 1 tablespoon
  7. Ghee/oil 3 tablespoons for frying
  8. Bay leaf 3
  9. Cinnamon 1 inch pieces 3
  10. Cloves 4
  11. Cardamom 3
  12. Coriander leaves a small bunch
  13. Boiling water 3 cups
  14. Cashews
  15. RAISINS
  16. Salt

Instructions

  1. Take a pressure cooker and heat 3 tablespoons ghee
  2. Add the cloves cinnamon cardamom and bay leaf and fry for a minute
  3. Add the ginger paste and fry until raw smell goes
  4. Add the chopped onions and fry until translucent
  5. Add the rice and fry for a minute or two
  6. Add the boiling water
  7. Add a few coriander leaves and chopped carrots and mix well.
  8. Add salt.
  9. Pressure cook for two whistles.
  10. Take a frying pan and add 3 tablespoons ghee/oil.
  11. Fry the cashews and raisins until golden brown and keep aside
  12. In the same oil fry the sliced onion until golden brown and keep aside
  13. Open the cooker after the pressure has released.
  14. Add coriander leaves fried cashews, raisins and onion and give it a gentle mix
  15. Ghee rice is ready.
  16. Can be served with raita and boiled egg.
