Tasty as well as healthy.
Boil bitter gourd in water with little salt and turmeric till fully cooked. Drain and keep aside.
Heat oil in a pan. Add mustard seeds, hing and curry leaves.
Put in the chopped onion and cook till soft.
Add tomato and cook. Add in about a quarter cup of water. Add little salt. (As already added for bitter gourd)
Add the spice powders, tamarind pulp and jaggery. Mix and let it simmer for 2-3 minutes.
Put in the cooked bitter gourd and mix well. Cook for another 5 minutes.
Serve.
