Bitter gourd in a spicy masala, bitter gourds are very healthy so why not include these in your regular diet with this tasty recipe.

Ingredients Serving: 2

  1. Bitter gourd - 2, sliced
  2. Turmeric - pinch
  3. Oil - 2 tbsp
  4. Mustard seeds - 1/8 tsp
  5. Hing - Pinch
  6. Curry leaves - a few
  7. Onion - 1, chopped
  8. Tomato - 1, chopped
  9. Tamarind pulp - 1 tsp
  10. Chilli powder - 1/2 tsp
  11. Garam masala - 1/4 tsp
  12. Garlic powder/ garlic paste- 1/4 tsp
  13. Ginger powder/ ginger paste - 1/4 tsp
  14. Chaat masala - 1/4 tsp
  15. jaggery - 1 tsp

Instructions

  1. Boil bitter gourd in water with little salt and turmeric till fully cooked. Drain and keep aside.
  2. Heat oil in a pan. Add mustard seeds, hing and curry leaves.
  3. Put in the chopped onion and cook till soft.
  4. Add tomato and cook. Add in about a quarter cup of water. Add little salt. (As already added for bitter gourd)
  5. Add the spice powders, tamarind pulp and jaggery. Mix and let it simmer for 2-3 minutes.
  6. Put in the cooked bitter gourd and mix well. Cook for another 5 minutes.
  7. Serve.
