Ingredients Serving: 4
300gram bitter gouard (karela)
For stuffing
1cup onion paste or finally chopped
3spoon coconut powder
1spoon feenel seeds powder
1spoon pomegranate seeds powder
1spoon kassuri methi (fenugreek leaves)
1/2spoon dry mango powder
salt as per taste
1/2spoon red chilly powder
Pinch of asofietida
1/2spoon cumin
2spoon mustard oil
For greavy masala
1/2cup onion paste
1/2cup tomatoes paste
1/2cup coconut milk
salt as per taste
1/2spoon turmeric powder
1/4red chilly powder
1/2spoon coriander powder
Chopped coriander leaves
1/2spoon cumin
2 sliced green chilly
1/2cup mustard oil for frying karela
Instructions
Peel karela (bitter gouard ) slit into middle spread some salt and keep it into the sun light for 3to 4 hours
Wash karela and keep aside
Take a pan heat it add mustard oil heat it
Add cumin add onion paste and cook for 3to4 mintues
Add all spices salt ,red chilly powder,fennel powder, pomegranate seeds powder,dry mango powder,dry mango powder,coriander powder, kassuri methi, and salt and mix well
Add coconut powder and cook for 3to 4 mintues
Remove the masala into a plate and allow to cool down
Stuff masala into karela
Heat a pan add 1/2cup mustard oil heat it till it becomes smoky flavor and fry karela til it becomes brown in colour
Meanwhile we prepare masala
Take a pan add oil heat it now add cumin onion paste saute it add turmeric powder and cook for one mintues
Now add tomatoes puree and cook for 3to4 mintues now add all spices and add coconut milk
And cook till masala is ready
Take a serving plate put masala and karela
Serve with Missi roti
