Chicken dum biryani made with basmati rice and chicken marinated in spices and cooked in dum style. Its one of the most popular hyderabadi cuisine.

Ingredients Serving: 5
5 n 1/2 cup long basmati rice
Oil 9 to 10 tbsp (my measurement for 1 cup rice = 2 tbsp oil)
3 tbsp zeera
4 to 5 cloves
9 to 10 black paper
5 to 6 green cardamom
4 cinnamon stick (small size)
3 to 4 Bay leaves
1 cup kothmir
1/2 cup mint leaves
A pinch Lemon yellow colour
4 medium sized potatoes
Salt to taste
1 n 1/2 cup Brown fried onion
For marination:
Chicken 750 gm
2 cup curd
2 cup tomato puree
3 TBSP GINGER GARLIC PASTE
Biryani masala 3 to 4 tbsp( I used Shan bombay biryani masala and laziz masala both)
1 medium size lemon
1 tbsp green chilly paste
1 tbsp red chilly powder
2 tbsp Coriender powder
1 tsp turmeric powder
Salt to taste
1 medium size lemon
2 tbsp kothmir
1 tbsp mint lives
Instructions
Wash chicken and marinate it overnight with marination ingredients given above. You can also marinate chicken for 3 to 4 hrs.
Now tak a pot add oil add whole garam masala. Saute.
Add marinated chicken, add few drops of shahi biryani essence and kesar essence and cook it till water gets burned.
Switch of the flame and add fried onion, chopped Coriender leaves and mint leaves. Mix it well.
Soak basmati rice for an hour. Then drain off the water.
Put more water to boil. After it gets boiled add 2 tsp Zeera, 4 to 5 black paper, soaked rice and salt. Cook rice till it gets 90% cooked.
After rice gets cooked drain off the water.
Now take potatoes and cut it into two slit and fry it till it becomes little Brown in colour. Then sprinkle some orange red colour on the fried potatoes and mix it.
Now take a pot and layer the rice and cooked chicken.
1st layer some white rice.
2nd layer cooked biryani masala. Then put fried potatoes on it. Then sprinkle some Coriender leaves and brown onion.
Again layer some white rice.
Then for last layer, in a cup mix lemon yellow colour n few drops of kesar essence in sum water. Then pour it on rest of the white rice and mix it well till it covers with yellow colour.
Again sprinkle sum Brown onion and Coriender leaves.
Put it on dum for 45 minutes with lid.
Switch of the flame and open the lid after 10 minutes.
Your delicious chicken Dum Biryani is ready to surve..
