ABOUT Hyderabadi Chicken Dum Biryani RECIPE

This Hyderabadi Chicken Biryani is cooked in Dum style with aromatic spices using basmati rice.

Ingredients Serving: 4

  1. To Marinade Chicken
  2. Chicken-3/4 Kg
  3. Yogurt - 2 tbsp
  4. Turmeric Powder- 1 tsp
  5. Coriander powder- 1 tbsp
  6. Biryani Masala- 2 Tbsp
  7. Red Chili powder - 1 tsp
  8. Mint - Half bunch
  9. Green Chili- 4
  10. Oil - 4 tbsp
  11. Ginger & Garlic Paste- 1 Tbsp
  12. salt - 3 tsp
  13. TO COOK RICE :
  14. Basmati rice - 3 cups
  15. Jeera - 1 tbsp
  16. Bayleaf-3
  17. Cloves-3 no’s
  18. Cardamom-2
  19. Cinnamon Stick- 2”
  20. salt - 1 tsp
  21. To Garnish :
  22. Mint Leaves-Fist Full
  23. Fried Onions- HandFull
  24. Saffron- few strands

Instructions

  1. Wash the chicken well and pat it using a paper towel to absorb excess water.
  2. Grind mint leaves and green chili paste.
  3. Mix all the ingredients in ‘to marinate ‘ column , add grinded mint & green chili paste mix throughly. Let it marinade for atleast 2 hrs in refrigerator.
  4. Meanwhile fry the onions for Biryani. Slice the onion in thin slices sprinkle some rice flour and then deep fry. Fried onions ready.
  5. Wash and soak the basmati rice for 45 minutes.
  6. In vessel boil water and add all the spices mentioned in top cook with rice let water started to rolling boil.
  7. Add soaked basmati rice let it cook for 60% . Then strain the water using strainer completely.
  8. In a bottom thickened Biryani handi spread all the marinated chicken evenly, add fried onions & mint leaves too.
  9. Then add 60% cooked rice and spread evenly.
  10. Spread well add fried onions, chopped mint leaves and close the lid.
  11. In a high flame cook for 5 minutes.
  12. Keep a dosa tawa under the Biryani handi and keep the flame medium cook for 15 minutes.
  13. Meanwhile soak the Saffron in warm milk and mix well, open the lid add saffron milk.
  14. Keep the flame low and cook for 15 minutes and switch off the flame.
  15. After 10 minutes open the Biryani and mix using a small stick or skewers to separate grains.
  16. Hyderabadi Chicken Dum Biryani Ready.
