ABOUT Paal Poli RECIPE

Paal ie.Milk, Poli is the poori here which as in many parts of India is made in different styles. Here I adapted a style where it is healthy as well as there is no compromise on taste and look. Milk is here thickened, cooked by adding condensed milk and saffron and brought to a semi pouring consistency, where in the meanwhile the poli dough is resting. Polis are Rava and maida kneaded with ghee, rolled, fried and soaked into the hot thick milk and it is sure a relish. Do try and enjoy hot or cold as desired.

Ingredients Serving: 4

  1. 1 cup rava/suji
  2. 1 1/2 tablespoon maida
  3. 2 tablespoon ghee
  4. 250 millilitre pure milk
  5. 3-5 strands saffron
  6. 3/4 tin of condensed milk
  7. few chopped almonds, pistachios blanched
  8. oil or vanaspati ghee to deep fry poli

Instructions

  1. Boil milk, add saffron and keep on slow fire to cook.
  2. Take the rava maida in a wide bowl, add ghee and rub well.
  3. Now add water slowly and make a soft dough and knead well.
  4. Rest dough for 15 minutes.
  5. Now add condensed milk slowly stirring to the cooking milk to sweeten and further, stir to thicken.
  6. Now divide resting dough into portions and make balls.
  7. Heat ghee simultaneously to fry.
  8. Flatten the balls and roll into big poori, cut out with a lid cover, smaller Poli/pooris.
  9. Start frying these now.
  10. As they puff up change sides and remove in a corning dish, as they start browning.
  11. Now pour the ready saffron milk on these, hot preferably, to seep into these better.
  12. Pour more milk if you wish too and now garnish with chopped dry fruits available.
  13. Serve as soon as possible or rest in a cool place.
  14. Enjoy hot warm or cold and you would love these for sure.
