ABOUT Phirni Kheer Kesari RECIPE

I gave this name as this Phirni looking dish is a kheer made with cooked rice, ground to a paste. Simmered with threads of saffron, and flavored with cardamom. Add some ground almond pistachio powder. Garnish with chopped almonds and pistachios.

Ingredients Serving: 4

  1. 500 millilitre whole milk
  2. 1 cup cooked rice
  3. 1 /4 teaspoon cardamom crushed
  4. 3-4 strands saffron threads
  5. 3/4 cup sugar or as per taste
  6. 1-2 teaspoon alomond pistachios powder or whole

Instructions

  1. Boil milk.
  2. Add sugar to it mix well and stir on a slow the flame.
  3. Grind cooked rice to a paste.
  4. Keep saffron and cardamom ready.
  5. Keep milk back on flame and add rice paste and top with saffron threads.
  6. Now keep stirring to avoid lumps.
  7. Add crushed cardamom.
  8. As it's cooking, stir and add the almond pistachio powder.
  9. Cook with care so that milk does not stick to bottom of the vessel.
  10. Remove to cool and garnish with almond pistachio chopped finely.
  11. Serve hot or cold.
