ABOUT Aloo Veggie Fry RECIPE

Got bored of regular aloo palya, aloo gravy. Tried for first time and the family loved it. Easy and simple dish for puri, phulka, chapati.

Ingredients Serving: 4

  1. 2 medium potatoes
  2. 1 big onion
  3. Mixed veggies (beans, carrot, capsicum) as required
  4. oil
  5. salt as per taste
  6. 1 teaspoon red chilli powder
  7. Coriander leaves

Instructions

  1. In a pressure cooker add sufficient water, little salt, potatoes. Close the lid and cook it until the potatoes are done.
  2. Once the pressure is released, open the lid. Take out the potatoes under running water. Peel the skin and mash the potatoes. Keep it aside.
  3. In a pan add sufficient oil (the vegetables should cook in the oil. No water to be added). Once it is hot, add in finely chopped onions and fry.
  4. While onions are frying, finely chop the veggies (cut it evenly and finely. Because veggies should be cooked evenly in the oil).
  5. Now add all the vegetables to the fried onions. Give a gentle stir. Close the pan with lid. On a low flame cook till all the veggies are perfectly done. (Keep stirring occasionally. Do not burn it).
  6. Now add salt, red chilli powder. Mix well. Fry until raw smell of chilli is cooked.
  7. Now lastly add in the coriander leaves and serve.
