ABOUT Sheer khurma / Sevai kheer RECIPE

A sweet dish with lots of dry fruits, milk and vermicelli.

Ingredients Serving: 4

  1. 1 litre milk
  2. 2 drops rose essence
  3. 1/2 teaspoon cardamom powder
  4. 5-6 deseeded chopped dates/khajoor
  5. 8-9 vertically sliced pistachios
  6. 20 - 24 chironji
  7. 8-9 vertically sliced cashewnuts
  8. 8-9 vertically sliced almonds
  9. 1 tbsp condensed milk/milkmaid
  10. 40 grams roasted vermicelli
  11. 3 tablespoon ghee

Instructions

  1. Take a pan, add ghee, add sliced almonds, saute slightly and keep aside.
  2. Add sliced cashews into the same sauce pan, saute slightly and keep aside .
  3. Saute pistachios in ghee as well and keep aside.You can saute dates if you wish to.
  4. In the same pan boil the milk, add cardamom powder, dates, cook it for 2 minutes, then add dry fruits, roasted vermicelli and let it cook for few seconds on low flame till the vermicelli becomes soft.
  5. Add condensed milk as well and cook for few minutes. Do not stir much else the vermicelli will not be visible.
  6. Add sugar if required, stir it, add few drops of rose essence and switch off the flame.
  7. Serve hot sheer khurma in dessert bowls and garnish with dry fruits, rose petals and enjoy.
