It is a typical Bihari style "Aam ka aachar". It is spicy and tangy condiment.

Ingredients Serving: 10

  1. Raw mangoes 5 kilograms
  2. Mustard seeds 1/2 kilograms
  3. Turmeric powder 100 grams
  4. Chilli powder 100 rams
  5. Hinge 10 grams
  6. Ajwaain, mangraila 1 teaspoon each
  7. Fennel seeds 50 grams
  8. Mustard oil 1 litre
  9. Bhuna methi + fennel powder 50 grams each
  10. Salt 250 grams
  11. Black salt 50 grams
  12. Kashmiri mirch powder 50 grams

Instructions

  1. Cut the mangoes and wash them properly.
  2. Clean and then sun dry.
  3. Add turmeric powder, salt and take aside for atleast 7-8 hours till the salt melts and water is released from mango.
  4. Take aside the released water. Then keep the mangoes sun dry for atleast 2 hours.
  5. Now add turmeric powder, chilli powder, ajwain mangraila, bhuna methi and sauf powder, sauf seeds, black salt, salt, mustard seeds, kashmiri mirch powder, oil 1/2 litre and mix well and keep atleast for 1 day in a bright sunlight.
  6. Now add another half litre oil and hinge in a pan. Then keep aside for cooling down.
  7. When it completely cools down then add this to the above mixture.
  8. Transfer the aachar to a glass jar, wait till it attains room temperature and tighten lid.
  9. Keep putting this jar in bright sunlight for a few days, till the aachar is done. Flavours of different spices combine into one and mango pieces become soft and well marinated in the masala.
