ABOUT Paneer Ki Jalebi RECIPE

Paneer ki jalebi is very crunchy and unique in taste. It is always made during festivals. I made on the occasion of ekadhashi. Basically mixture of paneer and arrowroot is used but one can use maida instead of arrowroot. powder. Result is the same. The recipe is very nice, has juicy texture and taste.

Ingredients Serving: 4

  1. 1/2 litre cow milk + 2 tablespoon hot milk
  2. 3 tablespoon arrowroot powder or maida
  3. 2 pinch saffron thread
  4. 1 pinch green cardmon powder
  5. 1 1/3 cup water
  6. 3-4 tablespoon vinegar
  7. 3/4 cup sugar
  8. 1 cup ghee for frying

Instructions

  1. Boil milk and rest for 5 minutes.
  2. Add 1/2 cup water and vinegar in another bowl and keep aside.
  3. After 5 minutes, add vinegar, water mixture and stir regularly.
  4. When paneer is fully separated then stop adding vinegar.
  5. Strain paneer or chenna.
  6. Wash the paneer under the tap water for 2-3 minutes and rest for 20 minutes.
  7. After 20 minutes, knead paneer for 7-8 minutes. One can use mixer for kneading (only 2-3 minutes on slow speed).
  8. Add 1 pinch saffron thread and 2 tablespoons hot milk in a bowl and keep aside for 10 minutes.
  9. Heat 3/4 cup sugar and 1/3 cup water. Add little bit saffron thread.
  10. When sugar is fully dissolved then switch the gas off and add 1 pinch green cardmon powder. One can use rose essence or water too
  11. Mix arrowroot powder or maida and 1/2 cup water.
  12. Mix properly.
  13. Add saffron milk mixture in maida liquid.
  14. Mix paneer and saffron maida mixture.
  15. Paneer mixture is ready.
  16. Fill this mixture in piping bag.
  17. Heat ghee or oil in kadai and then pipe the paneer mixture in the shape of jalebis or 8 shape.
  18. Cook on low to medium flame until the jalebis turn golden brown.
  19. Transfer fried jalebi in lukewarm saffron sugar syrup.
  20. After 1 minute, remove jalebi from sugar syrup & serve hot
