Ingredients Serving: 7
1kg mutton
2 tblsp oil and ghee each
1 bay leaf
2 cup curd
1 cup milk cream (malai)
1 tblsp red chilli pwd (in the mixture)
1 tblsp Turmeric powder

2 whole cloves garlic
4 Inch of ginger
6 green chillies (in the mixture)
1 onion sliced - golden fried
4 huge onion finely sliced
750g of basmati rice (Half cooked and water drained)
Whole garam masala (in the mixture)
Food color red and yellow
1 tblsp of cumin seeds (in the mixture)
2 tblsp coriander powder (in the mixture)
1 tblsp fennel seeds (in the mixture)
4 tomatoes medium sized into puree/paste (in the mixture)
½ cup of wheat dough (aata)
Instructions
In a vessel add 2 tblsp oil and 2 tablesp ghee and add chopped onions. Cook till golden brown. Then add garlic ginger paste and cook for 2 -3 mins
In a blender mixture add all the ingredients marked as “in the mixture” grind to paste.
Then add the paste to the vessel and cook till the paste starts leaving oil.
Then add salt to taste and turmeric powder.
Add all the meat to the paste and add ½ cup of water. Cook for about 10-15mins till the meat becomes tender. Cover the vessel with the lid.
Add curd and mix well then add milk cream and stir well.
Add the partially cooked basmati rice on the meat gravy.
Then add 2 tblspn of water and 1 tspn of food color( red and yellow in two separate containers) and sprinkle both separately on the rice.
Also add fried sliced onions and mint leaves on the rice.
Cover the lid and conceal the open edges of the lid with wheat flour .Cook on low flame for 7-8mins.
If u want you can dish out the dum biryani.
