ABOUT Bharva gilki (sponge gourd) RECIPE

Soft and yummy gilki in a stuffed form, to be served with some roti or rice.

Ingredients Serving: 4

  1. Gilki thin n small one 5-6
  2. Onion 3 finely chopped
  3. Ginger 1/2 inch
  4. Garlic 5-6 cloves
  5. Cumin seeds 1/2 tsp
  6. Fennel seeds 1/2 tsp
  7. Mustard seeds 1/2 tsp
  8. Fenugreek seeds 4-5 seeds
  9. Black cumin seeds (kalonji) 1/2 tsp
  10. Coriander seeds 1tbsp
  11. Asafetida 1/4 tsp
  12. Salt to taste
  13. Turmeric pwd 1/4 tsp
  14. Red chilli pwd 1 tsp
  15. Coriander pwd 1 tsp
  16. oil to fry

Instructions

  1. Peel the skin of gilki thinly and wash it. Cut gilki in finger size if they are too long and make a cut mark on a side of it for stuffing.
  2. Take a pan and dry roast fenugreek, fennel, coriander, cumin, mustard, kalonji seeds slightly and grind it in a mixer finely.
  3. Grind 1/2 onion , garlic and ginger together. Finely chop rest of the oNions.
  4. Now heat oil in a pan and add asafetida and chopped oNions, grind paste of onion, ginger , garlic and salt to taste. Stir till onion get soft. Now add seeds dry masala which we grinded earlier and turmeric , red chilli, coriander pwd. Keep stirring till oil separates.
  5. When the stuffing gets cool, fill the stuffing in gilki gently.. make sure gilki doesn't break.
  6. Half of the stuffing will be left after filling in gilki.
  7. Now heat 2 tbsp of oil in a flat pan and place gilki on the pan in a manner that stuffed portion should be downward.
  8. Pour the rest of the stuffing upon gilki.
  9. Close the lid and let the gilki cooked on a low flame
  10. Then after 7-8 mins turn the stuffed gilki gently.. not stirring too much.
  11. When the gilki will be cooked oil will seperates
  12. Serve hot bharva gilki with tawa roti and rice.
