ABOUT Double Decker Onion Fiesta RECIPE

This is a two in one dish involving two stages. First stage is to cook the onion pulao and second stage involves preparing mince meat balls(koftas) and its onion based gravy. Though a lot of hard work but the grandeur of this dish is unbeatable.

Ingredients Serving: 4

  1. For Brown Pulao:
  2. Rice 1 cup washed and soaked
  3. Onion 1 medium thinly sliced
  4. Green chillies 1-2 finely chopped
  5. Bay leaf 1
  6. Black Cardamom 1
  7. Cinnamon 1/2"
  8. turmeric a pinch
  9. coriander powder 1 tsp
  10. Garam masala powder 1/4 tsp
  11. Salt to taste
  12. Water 2 cups or more depending on the rice quality
  13. oil for cooking
  14. For minceballs (koftas):
  15. Onion small 1/2 finely chopped
  16. 250g mutton mince finely ground
  17. Turmeric 1/2 tsp
  18. Coriander powder 2tsp
  19. Red chilli powder 1/4 to 1/2tsp
  20. Garam masala powder 1/2 tsp
  21. Garlic ginger paste 2 tsp
  22. A few sprigs of coriander leaves
  23. Salt to taste
  24. A little oil as well as water to apply on hands
  25. For kofta gravy :
  26. Onions 2 medium size thinly sliced
  27. Tomato medium size chopped
  28. Green chillies 1 to 2 chopped
  29. Bay leaf 1
  30. Green cardamom 2
  31. Cinnamon 1/2" piece
  32. Turmeric 1/4 tsp
  33. coriander powder 1 tsp
  34. Red chilli powder 1/4 to 1/2 tsp
  35. Garam masala powder 1/4 tsp
  36. Salt to taste
  37. oil for cooking
  38. Water around 2 cups
  39. chopped coriander leaves for garnishing

Instructions

  1. For Brown Pulao--
  2. Take a vessel and heat around 3 tbsp oil
  3. Tip in whole spices- bay leaf, cardamom and cinnamon.
  4. Add the sliced onions and saute on medium flame till onions turn brown.
  5. Once onions are brown, add required amount of water. Be very careful at this stage. Even a few seconds delay can burn the onions
  6. Then add green chillies, coriander powder, garam masala and salt according to taste.
  7. Lastly add the rice and cook on medium to slow flame till rice is cooked.
  8. Keep on dum for ten minutes
  9. For the Gravy:
  10. Heat a little oil in a cook pot.
  11. Tip in the whole spices.
  12. Saute onions till pinkish and add a quarter cup of water Put off flame and set aside for the koftas.
  13. For Koftas:
  14. Clean and drain water from mince.
  15. Make a smooth paste of onions, chilli and coriander leaves.
  16. Add this paste and dry spices mentioned to the mince and mix nicely.
  17. Dab hands with oil and a little water and quickly form round smooth balls
  18. Final Stage:
  19. Add these koftas into the onions gravy along with chilli and a little ginger garlic paste.
  20. Add the spice powders except garam masala powder
  21. Add the tomatoes too.
  22. Saute the koftas with onions till brown adding a little water time to time
  23. Handle koftas gently lest they might split.
  24. Once koftas are nicely browned add around a a cup and a half of water.
  25. Sprinkle garam masala powder.
  26. Simmer on medium to low flame for around 40 minutes
  27. Serve the koftas with onion pulao and onions kachumar.
  28. Enjoy.
