ABOUT Stir-fried Egg Noodles with Prawns RECIPE

This recipe is a combination of many floating around on the net. Just do your own thing with whatever you have at home.

Ingredients Serving: 1

  1. Egg Noodles
  2. Medium sized Prawns: 3-4
  3. Carrot: Cut in juliennes
  4. Beans: Cut diagonally
  5. Capsicum: Diced
  6. Spring onions: Finely chopped
  7. Ginger: 1/2 tsp minced
  8. Garlic: 1/2 tsp minced
  9. Green chillies: To taste
  10. Whole dry red chilli: 1
  11. Rice wine: 3 tbsp or Vinegar: 1 tbsp
  12. Dark Soy Sauce: 1-1/2 tbsp
  13. Honey: 1 tbsp
  14. Sesame oil or any white oil: 3 tbsp

Instructions

  1. Boil noodles enough for one person with salt and a little oil and then rinse in cold water to avoid it getting stuck. Mix in a tbsp of sesame oil well into the noodles.
  2. While the noodles are boiling cut veggies of your choice. I used carrots, beans, capsicum and spring onions. Mushrooms too would go well here.
  3. Mix the rice wine, soya sauce and honey together and keep aside.
  4. Heat a little sesame oil and add the whole dry chilli broken up into bits. Add the finely minced ginger and garlic.
  5. Toss on high heat and add the prawns.
  6. As soon as the prawns turn pink, add the veggies. Keep tossing till they are nice and crunchy.
  7. Add the rice wine, soya sauce and honey mix.
  8. Mix well and add the noodles.
  9. Toss on high heat and take off fire with a tsp of sesame oil to get that glazed wet look and feel.
