I do make Tomato khakhra and Tomato Paratha. Today I stuffed Paratha with Egg Bhurji.

Ingredients Serving: 2

  1. For paratha
  2. Tomatoes 2 ( small)
  3. Wheat flour 1 cup
  4. Zeera roasted 1/2 tsp
  5. Chilli powder to taste
  6. Turmeric 1 /4 tsp
  7. Grated beetroot 1 tsp
  8. Coriander leaves finely chopped 1 tsp
  9. Sesame seeds roasted 1 tsp
  10. Salt to taste
  11. Oil 1 tsp
  12. Oil/ butter to roast Paratha
  13. For stuffing
  14. Eggs 2
  15. Onion 2 ( small)
  16. Garlic crushed 1 tsp
  17. Ginger grated 1 tsp
  18. Chilli powder to taste
  19. turmeric a pinch
  20. Garam masala 1 tsp
  21. Coriander leaves finely chopped 1 tsp
  22. Cheese grated 1/2 cube
  23. Oil 1 tsp / butter melted 1 tsp
  24. Boiled eggs 2 while serving

Instructions

  1. Blend tomatoes with very little water.
  2. Add 1 tsp water to grated Beetroot and squeeze out the juice.
  3. Take the flour, Add all masala mentioned. Add Beetroot juice.
  4. Add Sesame seeds, Coriander leaves and oil.
  5. Mix well. Now gradually add tomato puree and kneafd the flour.
  6. For Bhurji
  7. Heat oil/ butter in a pan. Add finely chopped onions.
  8. Saute, add ginger and garlic and all masala. Saute on a medium flame.
  9. After onions get sauted, add beaten eggs.
  10. Let the eggs cooked. Add coriander leaves. Cook till Bhurji dry well as we have to stuff it.
  11. Now turn flame off, let the mixture cool.
  12. Add grated cheese.
  13. Make lemon size stuffing balls. Roll the roti
  14. . Stuff it with egg bhuraji. Close well, roll a stuff Paratha carefully.
  15. Roast on griddle. Apply oil/ butter on both the sides.
  16. Your Delicious stuffed Parathas are ready to serve.
  17. Serve with cucumber raita and boiled egg.
  18. You can also serve with Beetroot vege soup.
