Maize spinach muffins

Ingredients Serving: 2

  1. For muffins: 3/4 cup maida
  2. 1/4 cup of maize flour
  3. 1 tsp of ginger garlic paste
  4. 1/2 tsp of red chilli powder
  5. 1/2 tsp of turmeric
  6. 1/4 cup of milk
  7. 1/2 cup of butter
  8. 1/2 cup of curd
  9. 1 tsp of baking powder
  10. 1/2 tsp of baking soda
  11. Some fresh corn
  12. Salt to taste
  13. For filling: 1 large cup of fresh spinach
  14. 2-3 cloves of nicely chopped garlic
  15. 1/4 cup nicely chopped onion
  16. 2 fresh red chilly
  17. Some white sesame seeds
  18. 1 tsp of lemon juice
  19. Oil for cooking
  20. Salt to taste

Instructions

  1. The dish is prepared in two steps: Firstly make the spinach filling in a pan, pour some oil, add nicely chopped garlic. When garlic is light brown in colour, add onion, red chilli, spinach and salt.
  2. Add some white sesame seeds in it. Remember one thing that all the process is done on a high flame and cook the spinach till the colour does not change.
  3. Secondly, make the muffins: In a bowl add maida, maize flour, curd and all ingredients step by step. Add salt and mix. Pour the mixture in muffins moulds and spread some black sesame seeds over it.
  4. Keep it in a preheated oven for 10-12 minutes for 210°C. When done cut the center of these muffins with cookie cutter and fill with spinach and white sesame seeds one more time. Keep into the oven to set the filling.
  5. When it is done, serve hot with green chutney and sauce.
