ABOUT Beetroot Pachadi RECIPE

A simple & tasty side dish served in a Kerala Sadya.

Ingredients Serving: 4

  1. Beetroot - 1 big ( peeled and grated)
  2. Garlic- 2 to 3 cloves ( finely chopped )
  3. Ginger - half inch piece finely chopped
  4. Green chilly - 1 cut similarly (adjust as per taste)
  5. Curd - 1 big cup
  6. Curry leaves - few
  7. Mustard seeds - 1tsp
  8. Coconut oil - 1 tbsp
  9. Salt to taste

Instructions

  1. Take a kadhai/pan & heat it. Put oil & when hot add mustard seeds & wait for it to splutter.
  2. Put the chopped ginger, garlic, green chilies & curry leaves.
  3. Saute well for a minute till the raw smell goes
  4. Now add the grated beetroot and mix well.
  5. Cook on low to medium flame for 2 to 3 minutes.
  6. Add salt & mix well.Turn off the gas and let it cool.
  7. When cooled down add curd & mix well.serve with rice & sambhar ...or can be eaten with roti sabzi also as a salad.
  8. Ready to serve
