ABOUT Zesty Sweet Rice RECIPE

A fusion version of Sindhi Tahri, this yellow, mild yet divine dish is sure to leave a lingering zesty taste on your palate . Here, this dish has been presented as a dessert in its pure and soulful form without adding any artificial colour or essence.

Ingredients Serving: 4

  1. Rice 1 cup
  2. Sugar 3/4 cup
  3. Green cardamoms 6 to 8 (crushed)
  4. Fennel Seeds 1 tsp
  5. Cinnamon 1/2 inch stick
  6. Salt a pinch
  7. Few saffron strands
  8. Milk 1 tbsp
  9. Few unsalted pistachios (chopped)
  10. Khopra slivers 2 tbsp
  11. Few almonds (chopped)
  12. Few black raisins
  13. Orange zest 2 tsp
  14. Ghee/oil 4 tbsp
  15. Enough water to cook rice

Instructions

  1. Wash and soak rice for an hour
  2. Soak saffron in warm milk
  3. In a pan heat ghee/oil and add the fennel seeds and crushed cardamom powder . Pour enough water to cook rice in it.
  4. Now add the rice to the boiling water, saffron along with the milk, a pinch of salt and let it cook till rice is three fourths done.
  5. Then add sugar , khopra slivers and orange zest. Gently mix them, cover and cook on low flame.
  6. Once sugar water is absorbed, add raisins and chopped nuts. Place the pot on dum.
  7. Heat a little ghee and pour over the rice.
  8. Garnish with some more nuts
