ABOUT HANDVA PIZZA DONUTS RECIPE

Ingredients Serving: 3

  1. For donuts: Handava flour 275 g
  2. Diluted buttermilk 180ml
  3. Garlic cloves 4-5
  4. Eno 3/4 tsp
  5. Grated bottlegourd 100 g
  6. Chilli flakes 1 tbsp
  7. Oregano to taste
  8. Sugar 1 tbsp
  9. Salt to taste
  10. Olive oil to grease moulds
  11. For tomato sauce:
  12. Tomatoes, medium boiled 6-8
  13. Onions, medium 2
  14. Ketchup 2 tbsp
  15. Red chilli flakes 2 tbsp
  16. Vinegar 1 tsp
  17. Salt to taste
  18. Dry Italian herbs 1 tbsp
  19. Thyme 1 tsp
  20. Basil, fresh chopped 1 handful
  21. Capsicum, large 1
  22. Olive oil 1 tbsp
  23. Garlic cloves 2

Instructions

  1. Mix the flour with buttermilk and salt and leave it to ferment overnight for 6-8 hours
  2. Once fermented (check for sour smell) add the remaining ingredients and mix well. You can add other vegetables like carrots, zucchini, onions if you like.
  3. Preheat oven to 180 degrees
  4. Grease donut moulds with olive oil and set aside
  5. Now add eno to your mixtures before baking, and mix well
  6. Pour the mixture gently in moulds and bake for 20-25 mins
  7. Allow to cool completely before removing from moulds
  8. You can also grill them for extra 2 mins to get a crackle on top
  9. For the sauce:
  10. Boil tomatoes in a pressure cooker. Allow to cool and peel off the skin. Crush them well with your hands. Make sure there are no large chunks
  11. Heat olive oil and add finely chopped onions. Cook till translucent
  12. Add chopped garlic and cook for another 30-40 secs stirring continuously
  13. Add tomatoes, herbs, vinegar and salt.
  14. Cook for 2 mins
  15. Add chopped capsicum and lower the heat
  16. Continue to cook stirring at regular intervals, till volume is reduced considerably.
  17. Add more fresh basil if required
  18. Serve donuts with pizza sauce, melted cheese, olives, herbs, paprika and a drizzle of olive oil
