ABOUT basanti pulao RECIPE

a bengali pulao recipe mainly cooked during Durga Puja. Basanti means the yellow colour.This pulao looks yellowish as per its name,a littke sweet rice dish.

Ingredients Serving: 6

  1. 750 gms govindavog rice(aromatic rice)
  2. ghee 4 tblspn
  3. Cashews
  4. RAISINS
  5. whole garam masala,bay leaves for tempering
  6. making akhni water-
  7. 20 green cardamom
  8. 5black cardamom
  9. cinnamon sitck 2( 2")
  10. Cloves 15
  11. Star anis 1
  12. mace 3
  13. nutmeg 2 pinch
  14. jafran 1 tspn
  15. Salt
  16. sugar

Instructions

  1. soaked thd rice foor 1 hour
  2. in between, make the yakhni water by boiling all those ingredients
  3. You have put water, the quantity should be double of the rice,so take to boil the water more of that. so that after boiling 40/45 min it will become just double of your rice amount.
  4. now take ghee in a pan,add whole garam masala,bay leaves for tempering, add soaked rice,saute it
  5. then add the yakhni water along with cashews and raisins,
  6. bring into a boil by keeping a lid. check the rice if would slightly cooked
  7. Then switch off the flame,keep a tight lid and put in dum for 5/7 min
  8. give standing time,check whether the rice is completely cooked or not.
  9. serve.
