ABOUT Dhaba Style Kheema Masala... RECIPE

This dhaba style kheema masala is a stunning accompaniment or a side dish that goes well with naans. This is served in almost all the dhabas along the highways in Punjab. Kheema being a versatile one, can be used in many different ways than one in our dishes . This dhaba style dish is so very flavourful and aromatic with whole spices and can be enjoyed at home also piping hot with naans or parathas.

Ingredients Serving: 5

  1. Mutton mince 500gm
  2. Potatoes diced and deep fried 1 cup (optional)
  3. chilli powder 1 tsp
  4. Salt to taste
  5. turmeric a pinch
  6. Green chillies chopped 2
  7. Bay leaf 1
  8. oil 2 tbsp
  9. Butter 1 tbsp
  10. Cumin seeds 1 tsp
  11. Cloves 4
  12. Ginger paste 1 tbsp
  13. Garlic paste 1 tbsp
  14. Red onions chopped 2
  15. Fresh tomatoes pureed 2
  16. Fennel powder 1/2 tsp
  17. Asafoetida a pinch
  18. Milk 2 tbsp
  19. coriander powder 1 tsp
  20. FOR GARNISHING....
  21. Onion Rings few
  22. Coriander leaves chopped few
  23. Ginger juliennes few

Instructions

  1. Heat oil in a kadai or a cooking pot.
  2. Add the cumin seeds, asafoetida and the bay leaf.
  3. Add in the ginger garlic paste and cloves along with the chopped onions.
  4. Saute until the onions are done.
  5. Next add in the chillies along with the mince.
  6. Saute it on a medium flame until the raw smell fades away.
  7. Now add pureed tomatoes or you can just add very finely chopped ripe tomatoes.
  8. Saute and simmer until mushy and soft.
  9. Now it's time to add fried potato cubes to it.
  10. Potato is optional. I added them for my family as they love this dish with potatoes.
  11. Cover and simmer on low flame
  12. Add some water about 1/2 a cup. No need to add much of it.
  13. Serve with lots of freshly chopped coriander leaves and also garnish with some fried chillies.
  14. Serve hot with some melted butter drizzled on it with naans.
