ABOUT Pasta Al Pesto RECIPE

Linguine or spaghetti flavoured with pesto sauce ( basil - garlic sauce)

Ingredients Serving: 4

  1. Spaghetti 1 pack
  2. Extra virgin olive oil 1/2 cup
  3. Fresh basil leaves 1 cup (mostly available in big basket)
  4. Garlic 5-6 cloves
  5. salt as per taste
  6. Pine nuts, almonds or walnuts (i added almond) 6-7
  7. French beans ( cut into two) 4-5
  8. Potatoes (thinly sliced) 2

Instructions

  1. Firstly, take a deep pan and fill water uro 3/4 ths, add salt and 2 tbsps of olive oil and boil until bubbles come up.
  2. Now as the spaghetti and boil till it is soft and completely cooled, tough Italians pause the cooking of pasta just before it is completely soft.
  3. Boil the potatoes and French beans and keep them aside.
  4. For pesto sauce, grind together the basil leaves, garlic, nuts, salt and olive oil into a fine smooth paste.
  5. Now on a low flame, take a thick pan, add olive oil, cooked spaghetti, boiled potatoes and beans and the finely ground pesto sauce.
  6. Mix them well and switch off the flame.
  7. Garnish the pasta with some toasted nuts, basil leaves and a generous pour of extra virgin olive oil.
  8. Voila... Pasta Al Pesto Lisa ready to gobble...
