Ingredients Serving: 4

  1. Bhindi 300 gms
  2. Walnuts 5_6
  3. Cashew nuts 7_8
  4. Onion 2 big
  5. Garlic Pods 4
  6. Ginger 1 inch
  7. Tomato 2 big
  8. Shahi jeera 1/2 tsp
  9. Fennel Seeds 1 tsp
  10. Cumin powder 1 tsp
  11. Coriander powder 1/2 tsp
  12. chilli powder 1 tsp
  13. Garam masala powder 1 tsp
  14. yoghurt 1/2 cup
  15. Dry fenugreek leaves 1 tsp
  16. Salt as per your taste
  17. Oil as required

Instructions

  1. Wash and cut bhindi in 1/2 inch pieces
  2. Soak fennel seeds , cashew nuts and walnuts in warm water for 20 mins
  3. Make smooth paste after 20 mins
  4. stir fry ladies finger in batches
  5. Chop onion , tomato , garlic and ginger
  6. Mince garlic and ginger
  7. Heat oil in a nonstick pan , when hot add shahi jeera
  8. Saute for 1 mins , add chopped onion , saute for 2_4 mins
  9. When onion turns brown add ginger and garlic
  10. Saute for 2_3 mins
  11. Add kasuri methi and garam masala powder also
  12. Again saute for 1_2 mins
  13. Add tomatoes , and 2 tsp water
  14. When tomatoes becomes soft add turmeric powder , cumin powder , coriander powder and chilli powder , salt also
  15. Saute for 2_3 mins , add fried bhindi
  16. Mix with the masala well
  17. Now add whisked curd
  18. Mix and cook for 3_4 mins
  19. Add cashew and walnuts paste
  20. Cook for 5_10 mins
  21. Garnish with chopped coriander leaves
  22. Serve hot with your favourite indian bread or rice
