Zafrani is nothing but saffron and this pulaw uses a good amount of saffron giving it a beautifull colour fragrance n flavour .Use the best saffron you can find and this dish is sure to be a crowd pleaser.

Ingredients Serving: 4
For rice :
1 big bowl rice
1/4 spoon saffron
50 gm Cashew , almond and raisins
100 gm peas
2 orange carrot
1 onion chopped
2 tomato fine chopped without seeds
1/4 cup Milk
2 cardamom
2 cloves
1 bay leaf
1/2 tspn turmeric
1/2tspn Kashmiri mirch
1/4 red chili powder
1/4 Garam Masala
1/4tspn black salt
White salt according to taste
1/2 tspn Shahi jeera
2 tablespoons Desi ghee
Step 2 .For saffron pearls
50 gm cottage cheese
1 boil potato
2 spoon flour
1/4 tspn saffron
Oil for frying
Instructions
Wash, rinse and soak rice in cold water for 2 hours
Now make saffron pearls
Take grated cottage cheese add mash potato ,flour n make a smooth dhough
Make small balls of this mixture and stuff 2 to 3 threads of saffron inside the cottage cheese balls
Heal oil in a pan and deep fry all the balls it becomes golden brown
Now soak the saffron in warm milk set it aside until ready to use
Boil the peas ,cut carrot and onion in long thin size
Now boil 2 glass water add turmeric powder while boiling the rice for colour
Don't over boil it . Now drain all the water of rice
Heat 1 tablespoons ghee in a large saute pan and roast the nuts until golden ,remove in a small bowl
In the same pan heat 2 tablespoons desi ghee add cloves , cardamom ,bay leaf , black pepper n shahi jeera and cook it for 30 second or until it starts to smell fragrent
Now add chopped onion n saute ittill become golden brown
Now add the chopped carrots cook for a while then add boiled peas
Add boiled rice and all spices according to your taste
Add chopped tomato , raisins , saffron milk and mix it very gently
Now cover and cook it on very low flame for 5 to 6 minutes
Now zafrani rice is ready to eat
Now take it in a plate and put some roasted nuts n cottage cheese saffron balls on the rice n serve it with nargisi dum aaloo n cucumber raita
