ABOUT Hilsha Pulav / Ilish Pulav RECIPE

In west bengal, the fish hilsha is very much available and popular. In the Hilsa season people make many types of hilsha dishes and specially hilsha Pulav.

Ingredients Serving: 4

  1. Basmati or Dehradun rice 500gm
  2. Hilsha fish 500gm
  3. Onion paste 1/2 cup
  4. Ginger paste 1 teaspoon
  5. Bey leaf 2-3
  6. CINNAMON STICKS 1 inch
  7. Turmeric powder 1 teaspoon
  8. Red chilli powder 1 teaspoon
  9. Garam masala powder 1 teaspoon
  10. Salt to taste
  11. Some cashew nuts 10
  12. oil
  13. sugar 1/2 tsp
  14. ghee

Instructions

  1. Wash the rice clean and drain the water.
  2. Soak cashew nuts in water.
  3. Wash the fish. Marinate with salt and turmeric powder and fry a little.
  4. Take a pan and heat the oil. Fry bay leaf and cinnamon stick a little.
  5. Add onion paste, ginger paste and saute until it becomes brown.
  6. Now add rice and mix well.
  7. Add all the masala powders and mix well.
  8. Add water and cashew nuts.
  9. When the rice is soft put the fish inside the rice.
  10. Cover with a lid and cook for another 2-3 minutes.
  11. Add ghee above and serve hot.
