Khandvi is a savory snack in Gujarati cuisine. It consists of yellowish, tightly rolled bite-sized pieces, and is primarily made of gram flour and yogurt.
Combine the besan, curd and water to make the batter, add turmeric powder, salt, hing powder and mix well.
Cook on slow flame while Stir continuously till it becomes thick. Approx 10 minutes.
Now spread a spoonful of batter on a greased thali and wait for a few seconds then try to roll it up.
If it doesn't roll easily then cook for few more minutes. Check one more time till done.
Divide the batter into two equal portions.Spread each portion on greased side of thali evenly to make a thin layer using a flat spoon while the batter is still hot.
Cut the khandvi on each thali length wise in equal portions and then roll up each strip gently. Place khandvi in a serving plate.
Heat oil in a nonstick pan & add rai. When the seeds crackles add hing powder, curry leaves and green chilies then pour the tempering over the khandvis. Serve garnished with coriander.
