Spinach Malfatti is a super easy and healthy Italian recipe.

Ingredients Serving: 2

  1. 2 Cups - Finely chopped spinach
  2. 1/2 Cup - Crumbled paneer
  3. 2 tbsp - All purpose flour
  4. 1/2 tsp - Salt
  5. Pinch of baking powder
  6. 1 tsp - Finely chopped green chilli
  7. For sauce : 1 tbsp - Chopped garlic
  8. 1 - Medium sized onion, finely chopped
  9. 1 Cup - Tomato puree
  10. 1/2 tsp - Sugar
  11. 1/2 tsp - Black pepper
  12. Salt to taste
  13. 1/2 tsp - Chopped green chilly
  14. 1 tbsp - Oil
  15. For garnish : 2 tbsp - Parmesan cheese, finely grated
  16. Few coriander leaves

Instructions

  1. Boil chopped spinach leaves for 5 mins in boiling water. Strain spinach from water and allow to cool.
  2. Mix paneer and all purpose flour in cooled spinach and mix well. Add chopped green chilly , pinch of baking powder and salt and form a smooth dough.
  3. Make small balls from this dough and steam for 5 mins.
  4. For sauce : Heat oil in a pan and add chopped garlic onion and green chilly and saute till onion gets translucent. Add tomato puree and cook till it thickens.
  5. Add salt, black pepper and sugar, cook for 2-3 mins.
  6. To assemble : In a platter spread the sauce and arrange steamed spinach Malfatti over it.
  7. Garnish with grated cheese and a few coriander leaves.
