Ingredients Serving: 4

  1. Fresh aloe vera leaves - 6
  2. Fenugreek seeds - 1/2 Cup
  3. Green chilli, chopped - 1 Cup
  4. Roasted coriander seeds - 1/2 Cup
  5. Turmeric - 1 tsp
  6. Red chilli powder - 3 tsp
  7. Fennel seeds - 1/4 Cup
  8. Mango powder - 3 tbsp
  9. Salt - as required
  10. Heeng - 1/2 tsp
  11. Cumin - 1 tsp
  12. Oil - 2 Cups

Instructions

  1. Wash alovera leaves and pat dry. Remove the thorny part and chop in to cubes.
  2. Take a pan, boil water add fenugreek seeds in. Cook till tender. Drain all the water, pat dry the seeds.
  3. Dry roast the masala a little bit and grind it coarsely.
  4. Heat oil in a pan and bring to smoking point. Let it cool then take out half of the oil and keep aside. Now add aloevera, fenugreek seeds, green chilies in the remaining oil. Add salt, turmeric powder, red chilli powder, mango powder and ground masala in it. Mix well and switch of the flame.
  5. Let it cool. Fill the ready pickle in glass bottles and add the remaining oil. Eat as desired.
